What the inspector actually looks at
- Product temperature, probed. Usually in several units, usually including the one you would rather they skipped.
- A thermometer in every cold unit. Present, accurate, and readable without moving three cases of produce. Missing thermometers are one of the easiest violations to avoid and one of the most commonly written.
- Whether the equipment is capable. A unit that cannot hold 41°F under normal load is a violation on its own, independent of what happens to be stored in it that day.
- Door gaskets. Torn, hardened or missing gaskets get cited, and they are also a leading cause of the temperature failure in the same report.
- Condensate and drainage. Water dripping onto stored food, standing water on a walk-in floor, or a drain line discharging without a proper air gap.

A stockpot of chili put straight into the walk-in does not just miss its own window; it dumps enough heat to push every other product in there above 41°F while it cools.

Your ice machine is a food contact surface
Ice is food. Inspectors open the machine, and what they find inside is one of the more common serious write-ups in any North Texas jurisdiction — pink or black slime on the curtain and deflector, scale on the evaporator plate, a scoop stored in the bin.

Nearly every cold-holding violation traces back to one of five mechanical causes, and all five are cheaper to prevent than to fail an inspection over:
- Dirty condenser coils. The most common cause by a wide margin, and the easiest to fix. A greased-over coil cannot reject heat, so the unit runs constantly and still loses ground in July.
- A failed defrost cycle. The evaporator ices over, airflow stops, and the unit holds temperature at the sensor while the product warms.
- Worn door gaskets and heaters. Cheap parts, constant load, and a direct line to both a citation and a power bill.
- Low refrigerant charge. Always a leak. Topping it off without finding the leak means paying for the same repair three times.
